4 large Peeled Potatoes
1 large can Tomatoes (italian seasoned)
1 Bag Peeled baby Carrots
2 Celery hearts
1 can Peas
1 medium Cabbage
1 canLightly red Kidney Beans
2 cubes Vegetable Bullion
1 can Grean Beans
1 Box penne Pasta (whole grain)
You will need a very big pot for this recipe
Add about 6 cups of water in pot and leave to boil
While water is heating up get your cutting board and knife out and begin chopping
Celery and peeled carrots and red cabbage (purple in color) and your potatoes
Size of chop is really up to you.
(these ingredients can also be bought fresh if you prefer, but I was in a hurry so i grabbed cans)
the order of canned ingredients doesn't matter,
just add everything to your pot and drop in the bullion cubes.
Stir frequently throughout the last steps
The pasta can now be added, add as much or as little as desired.
(the whole box was a bit overwhelming but I needed to feed 10 people so I put it all in)
Cover and Leave to simmer until carrots and potatoes and pasta noodles are soft
remove from heat and set to cool at least 15 minutes.
Serve in a sourdough bread bowl or soup bowl.
Perfect for cold fall/winter days and easy to feed a large amount of people.
